Mix Dal And Pakwan Cuppies

Dal Pakwan is a very famous and a traditional Sindhi breakfast/snack.
To make it more healthy, I have made use of half Maida and half Wheat Flour
Also, instead of frying, I have gone in for Baking the Pakwan Cuppies.
Lastly, the idea of Pakwan as cuppies, makes it easier to serve in any gathering, party, get together or to fussy kids.

Ingredients
- For the pakwan cuppies- 1 cup maida
- 2 tbsp sooji
- 1 cup whole wheat flour
- Salt
- ½ teaspoon roasted jeera
- 3 to 4 tbsp oil or ghee
- Ice cold water as needed
- For the Mix Dal-½ cup green moong
- ¼ cup moong dal
- ¼ cup masoor dal
- ¼ cup chana dal
- 1 onion finely chopped
- 1 teaspoon tamarind paste
- Salt
- 2 green chillies chopped
- ½ teaspoon garam masala powder
- ½ teaspoon red Chilli Powder
- ¼ teaspoon haldi
- To serve- Mint-tamarind chutney
- To serve- Chopped onion

Instructions
- To make the Cuppies- Take all ingredients except water in a bowl. Start kneading lightly so that ghee gets mixed well with the flours. Using little water knead a medium tight dough.
- Rest for 15 minutes. Roll out a small rotis. Place in cupcake moulds. Press them in.
- bake in a preheated oven at 180 degrees for 10 to 12 minutes till done. Cool a bit and de mould.
- To make the Masala Dal- Wash and soak the dals for 2 hours. Wash and soak the moong overnight. In a pressure cooker, add 2 tablespoon oil. Heat on low flame.
- Add in the onions and fry till they caramelize. Add in the seasonings. Add 2 to 3 cups water. Add the tamarind paste.
- Bring to a boil. Add the green chillies, dals, moong and cook for 3 whistles on full flame.
- Lightly mash to get smooth consistency. To serve- Add 1 tablespoon dal in each cuppie. Garnish with onions. Serve with the chutney.
