Microwave Omelette Muffins

A very easy and quick breakfast recipe. This recipe is the same as the regular omelette but instead of using a frying pan, use a muffin cup and pop them in the microwave to cook.

Ingredients
  

  • 3 egg
  • 1 onion finely chopped
  • 1 to mato finely chopped
  • 1 green chili finely chopped
  • 1 carrot small, finely chopped
  • 3 tablespoon capsicum green, finely chopped
  • 1 tablespoon oil
  • 1-2 teaspoon salt as per taste
  • 1 tablespoon cheese grated, for garnish
  • 1 teaspoon oregano grated, for garnish

Instructions
 

  • Break the egg in a bowl and beat it nicely.
  • Add chopped onions, chillies, tomatoes, carrot, green bell pepper, salt and oil and mix nicely all together.
  • Grease the muffins cup with oil.
  • Pour the omelette batter in muffin cups till half of the cups or else it will pour off. Spread some cheese and Oregano over it.
  • Pop it in the microwave in full power for 2 mins. Take out serve.
