Methi Mathi paratha is one of the best Indian Breakfast. It is Indian flat bread prepared with Fenugreek leaves, Rice Flour, Wheat Flour. It is served with curd or Green chutney.
1 cup Fenugreek Leaves ( finely chopped)
1 cup wheat flour and 1/3 cup for dusting
1/3 cup rice flour
1/2 teaspoon Cumin seeds
1 tspn Red Chilli powder
Pinch of asafoetida
1 tspn Ginger paste
1 Tspn Garlic paste
Salt to taste
Oil for shallow frying
Soak the methi leaves in water for couple of minutes. Wash methi leaves twice or thrice. Once it is done finely chop them.
In a bowl take wheat flour, Rice flour , methi leaves, ginger garlic paste, asafoetida, red chilli powder, Salt and cumin seeds. Mix everything well.
Add water and knead it into soft dough. Set aside for half an hour
After half an hour knead again and make small round shape balls.
Take one round ball . Coat it with dry wheat flour and place it over rolling board
Roll it as you do yo make normal paratha. Heat the tawa and place the paratha on it.
Flip the paratha and add oil or ghee on both sides. With the help of spatula cook till brown spots appear.
Your paratha is done serve it with Green chutney and sliced onion.
Make sure you knead the dough into soft texture.
