  • 2 cup Quinoa cooked
  • 1 cup Chickpeas canned or boiled, add more if you desire
  • Feta Cheese for garnishing
  • 1-2 large Cucumber diced ones
  • 1 cup Cherry Tomato halves
  • 1/4 cup Mint chopped
  • 1/2 cup Parsley chopped
  • 4 tbsp Olive Oil
  • 4-5 cloves Garlic fresh minced
  • 1/2 cup Lemon Juice dabur hommade
  • 1-2 tsp Salt or as per taste
  • 1/4 cup Spring Onions chopped
  • 1/2 tsp Black Pepper or as per taste


  • Wash Quinoa thoroughly and boil it in the 1:2 ratio. 1 cup Quinoa to 2 cups of water. You can boil it in vegetable stock for more flavour.
  • Put all your greens and tomatoes in a salad bowl. Add the cooked quinoa to it.
  • Prepare your lemon vinaigrette by adding 2 Tbsp olive oil, 1/2 cup lemon juice and 4 cloves of minced garlic. Mix well.
  • Add the vinaigrette to the greens and quinoa and toss it well. Garnish with crumbled feta cheese.
