Simple Mediterranean Quinoa Summer Salad, is a warm salad which is a full protein packed breakfast meal, perfect for your rushing mornings.
Cooked Quinoa - 2 cups
Canned Chickpeas or boiled chickpeas - 1 cup or add more if you desire.
Feta Cheese - For garnishing
Cucumber diced - 1-2 large ones
5. Cherry tomatoes halves - 1 cup
6. Mint chopped - 1/4 cup
7. Parsley chopped - 1/2 cup
8. Olive Oil- 4 Tbsp
9. Fresh Garlic minced - 4-5 cloves
10. Dabur Hommade Lemon juice - 1/2 cup
11. Salt - to taste
12. Spring onions chopped - 1/4 cup
13. Black pepper - to taste
Wash Quinoa thoroughly and boil it in the 1:2 ratio. 1 cup Quinoa to 2 cups of water. You can boil it in vegetable stock for more flavour.
Put all your greens and tomatoes in a salad bowl. Add the cooked quinoa to it.
Prepare your lemon vinaigrette by adding 2 Tbsp olive oil, 1/2 cup lemon juice and 4 cloves of minced garlic. Mix well.
Add the vinaigrette to the greens and quinoa and toss it well. Garnish with crumbled feta cheese.
