Ingredients
- Cooked Quinoa - 2 cups
- Canned Chickpeas or boiled chickpeas - 1 cup or add more if you desire.
- Feta Cheese - For garnishing
- Cucumber diced - 1-2 large ones
- 5. Cherry tomatoes halves - 1 cup
- 6. Mint chopped - 1/4 cup
- 7. Parsley chopped - 1/2 cup
- 8. Olive Oil- 4 Tbsp
- 9. Fresh Garlic minced - 4-5 cloves
- 10. Dabur Hommade Lemon juice - 1/2 cup
- 11. Salt
- 12. Spring onions chopped - 1/4 cup
- 13. Black pepper - to taste

Instructions
- Wash Quinoa thoroughly and boil it in the 1:2 ratio. 1 cup Quinoa to 2 cups of water. You can boil it in vegetable stock for more flavour.
- Put all your greens and tomatoes in a salad bowl. Add the cooked quinoa to it.
- Prepare your lemon vinaigrette by adding 2 Tbsp olive oil, 1/2 cup lemon juice and 4 cloves of minced garlic. Mix well.
- Add the vinaigrette to the greens and quinoa and toss it well. Garnish with crumbled feta cheese.
