Mawa Cake

Mawa is one of India's famous and a basic sweet. Adding it to a cake recipe leads to a fusion of Indian Sweet and Western Cake. The two flavors together taste amazing.

Ingredients
  

  • 200 gm Condensed milk
  • 100 gm Maida
  • 50 gm Crumbled unsweetened Mawa
  • 1/4 teaspoon elaichi powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking soda
  • 3 to 5 tbsp milk
  • Coarsely crushed Cashews to garnish
  • 50 gm Butter at room temperature
  • 1 teaspoon apple cider vinegar

Instructions
 

  • Sieve the maida, baking powder, baking soda twice and keep aside. In a big, deep bowl whisk the mawa with electric whisker or balloon whisk so that no lumps remain.
  • Add the butter and Condensed milk and whisk till it is a smooth mixture. Add the maida mixture and the elaichi powder,using only the balloon whisk, gently mix it so that it all comes together
  • Add the crushed kaju pieces gently in the batter. Add little milk to adjust the batter consistency, just like idli batter Lastly add the vinegar and mix it till the batter looks like its rising a bit, say 4-5 whisks, with the balloon whisker.
  • Pour in a 6 inches round greased tin and bake for 35-40 mins. Check with a toothpick to see if its done. Demould the cake on cooling completely .
