Recipe Notes
Additional Tips
- For an extra burst of texture, add a handful of finely chopped cucumber or roasted peanuts just before serving to enhance the crunchiness of the raita.
- If you prefer a vegan version, substitute dairy yogurt with thick coconut yogurt, which pairs deliciously with mango and adds a subtle tropical flavor.
- Allow the tempering of mustard seeds, green chilies, curry leaves, and asafoetida to cool for a minute before pouring over the yogurt-mango mix, to prevent curdling and preserve the creamy texture.
- For a visually appealing presentation, garnish the raita with thin mango slices, a sprinkle of roasted cumin powder, and a few fresh curry leaves on top.
