Recipe Notes

Additional Tips

  • If the dough feels too crumbly, add a teaspoon of warm milk or a bit more yogurt to help bind the makai (corn) flour, which can be drier than wheat flour.
  • For added texture and nutrition, mix in finely chopped fresh coriander, green chilies, or grated paneer before kneading the dough.
  • To prevent parathas from sticking or tearing while rolling, roll them gently between two sheets of parchment paper or lightly dust with wheat flour, as corn flour lacks gluten and can be delicate.
  • Serve with a dollop of homemade white butter and tangy pickle for an authentic Punjabi touch that complements the earthy flavors of corn and spices.
