Lemon rice is a popular preperation of rice & it is served by almost all South Indian restaurants. As the name suggests it has a tangy lemon flavour & requires very few ingredients.here is the recipe

Ingredients
- 2 cup Rice (steamed)
- 1 tbsp Peanuts
- 1 tsp Black Mustard Seeds
- 2 Green Chillies (slitted)
- 1/4 tsp Ginger (finally chopped)
- 1 Lemon Zest (or lemon from lemon)
- 1 tbsp Lemon Juice
- 7 leaves Curry
- 1 tbsp Kasuri Methi
- 1 tbsp Oil
- 1/4 tsp Turmeric Powder
- 1-2 tsp Salt (or as per taste)
- 1 pinch asafoetida

Instructions
- Heat a wok. Add oil. Once the oil is hot add mustard seeds& let it crackle
- Now add ginger chili curry leaves & kasuri methi. Cook for 1 min
- Add peanuts . Cook for 2-3 min. Add turmeric powder. Mix well
- Now add rice . Mix well. Add lemon juice , lemon zest & salt
- Mix well. Cook for 2 min & it's ready to serve.
- Though it is good to eat alone but you can serve it with coconut chutney
Recipe Notes
- For lemon rice rice grains must not be sticked together
- It turns out very good with left over rice
- You can add chana dal & split urad dal in tadka . My family likes it without dal so I Don’t use it
