Kovakkai / Ivy gourd has high medicinal value. This veggie is used majorly in Asian cuisines and particularly in Indian cuisine.
We can cultivate Ivy gourd in home gardens also and its fruits, leaves are used as medicine for diabetes, constipation and we can apply the leaves extract on wounds.
This stir fry recipe will go well with curd rice, rasam and sambar. If you think the stir fry lose original health benefits, you can reduce oil and turn off the flame after adding the coconut.

Ingredients
  

  • 2 cup Kovakkai Ivy gourd (chopped thinly in circle shape)
  • 1 Onions Medium size
  • 1 teaspoon Red chili powder
  • 1 teaspoon Coriander powder
  • 3 teaspoon Coconut shredded
  • ½ teaspoon Salt
  • 1 teaspoon Oil
  • 1 teaspoon Refined Oil
  • ½ teaspoon Mustard
  • ½ teaspoon Urad dal
  • 1 sprig Curry leaves

Instructions
 

  • Wash Ivy gourd (Kovakkai) and cut into thin round slices.
  • Heat a wok, add 1 tsp of oil, add sliced kovakkai in it. Sprinkle salt over the veggie and sauté in medium flame for 1 minute.
  • Then sprinkle 2 tbsps of water and cook covered for 5 mins. Give a stir frequently to avoid burning and even cooking.
  • Meanwhile chop onions and heat another wok in a separate burner, add oil and season with mustard, urad dal and curry leaves.
  • Add chopped onions to it, sauté for a while till it  turns transparent. Now add the spice powders(Red chili powder and coriander powder). Stir in low flame for 1 min to completely remove the raw smell.
  • Add this mixture to cooked kovakkai and give a fine mix to blend well.
  • Finally add the shredded coconut and stir till it becomes crisp and golden color. Turn off the flame and serve with rice.
