About Katlu - In India special food diet is followed during & after pregnancy, it will help both mother & child's health. Though different states have their different diet & way of cooking.
Here I present one special food item which is consumed by mother after pregnancy, specially in Gujarat. It contains various spices, edible gum, jaggery, ghee & katlu, which is key ingredient.
Katlu is itself mixture of so many spices, which is available in some special grocery store.

Ingredients
  

  • 2 cup wheat flour
  • 1 cup edible gum goond (fried in ghee)
  • 1 cup almonds sliced
  • 3 tbsp soonth powder (dry ginger powder)
  • 2 tbsp pipramul powder (long pepper powder)
  • 1 tsp Turmeric Powder
  • 300 gm ghee approximately
  • 2 cup jaggery grated

Instructions
 

  • Heat ghee in non stick pan fry gum & keep aside

  • Now in same pan, saute wheat flour on slow flame. Add more ghee if needed.
  • Saute till aroma arises &colour becomes pink.

  • As flour is sauted properly add fried gum, soonth powder, piprool powder, turmeric powder sliced almonds. Leave some sliced almonds for garnishing.

  • Mix well & turn off flame.

  • Let it cool down till it reaches room temperature. Then add grated jaggery & mix well.

  • Now spread it in thali & level it. Sprinkle sliced almonds.

  • Cut pieces after it cool.

Notes

  • One  can add dried grated coconut.
  • Can also adjust quantity of jaggery according to your taste.
