Karnataka Style Sambhar

When we hear the name of Sambhar, we need no introduction. Karnataka Sambhar is a very healthy and nutritious dish. It has the taste of toor daal and assorted vegetables. It can be served with rice, Idly, dosa or Pongal.

Ingredients
  

  • 1 chopped potato
  • 1 drumstick cut into long
  • 1/2 cup chopped raddish
  • 1 small brinjal chopped
  • 1/2 cup chopped beans
  • 1/2 cup chopped carrot
  • 1 medium size onion cut into slices or pieces
  • 1/2 cup chopped bottle gourd
  • 1/2 cup toor dal
  • 3 tblspn imli pulp
  • 6 shallots
  • 1 big bowl chopped onion
  • 2 chopped tomato
  • 2 tblspn Sambhar powder
  • 1/2 tspn haldi powder
  • 1 pinch hing
  • 1/2 tspn fenugreek seeds
  • 2 dry red chillies
  • 1/2 tspn mustard seeds
  • Salt

Instructions
 

  • Wash and soak the toor dal for 20 mins. Now pressure cook it by adding fenu greek seeds, onion shallots and ghee. Add water to it. We add onion shallots to this dal to get some different taste. Now give 4 to 5 whistles.
  • When it cools down open the lid and mash it. Now transfer all the vegetables to the heavy bottom pan and pour water to cover it. Now add haldi powder and half portion of sambhar powder and salt. Cook it for 5 to 10 mins.
  • After it see that vegetables are half cooked, then add chopped tomato and tamarind pulp to it. Mix it very well and cook for 10 mins. When 10 mins get over add remaining sambhar powder and cooked toor dal. Mix it properly and pour little more water.
  • Now again cook it for 10 mins and after that add chopped corriander leaves. Mix it very well. Now off the flame. Its ready. Now for tempering, heat the pan and put oil in it.
  • Now add mustard seeds, when starts spluttering, add red chilli, fenu greek seeds, curry leaves, chopped onion and hing. Saute it till it becomes brown. Now when the color changes add it to the Sambhar. Mix it very well. Serve with Idly, dosa or Rice.
