About Kara Boondi

Kara Boondi is a spicy snack from South India. This Kara boondi is the salted version whereas we have another sweet version called sweet Boondi which is also very popular among the natives . Kara Boondi is a healthy , yummy snack to be made with very few ingredients . A must have Savory in most of the South Indians household during Diwali season . This spicy Boondi is a perfect match for a cup of hot cardamom tea .

  • In a bowl , take the measured Besan flour , 1 tablespoon rice flour , required salt , a pinch of hing , 1/4 teaspoon turmeric powder and a big pinch of baking soda.
  • Add water gradually while mixing the flour to form smooth , lumpfree batter .
  • Heat oil in a wok .
  • To check batter consistency , drop one drop batter into the hot oil from a medium height . If the batter is thin and runny , the Boondi wouldn’t shape up and instead will fall flat .
  • If the batter is too thick , the Boondis will get uneven shapes with tails and bends . So adjust the batter consistency accordingly .
  • To start making boondis , take a perforated ladle called jalli karandi . Hold the perforated ladle in such a way it faces the oil . Hold it in medium height to get round shape boondis .
  • Now take one tablespoon full of batter and spread the batter on the perforated ladle with a spoon so that batter falls like beautiful pearls into the oil .
  • Fry the boondis in medium heat . Don’t disturb the boondis till the side turns crispy .
  • When the boondis turn crispy , turn to other sides and fry till done .
  • Likewise , repeat the steps to fry boondis in batches .
  • Transfer the boondis to a bowl and cool them completely.
  • Once the boondis are cooled , heat little oil in a pan . Fry cashews to golden brown . Fry curry leaves . Remove the pan from the heat . Allow the nuts and curry leaves to cool .
  • Now in a wide bowl . add the prepared boondis , add 1 teaspoon red chilli powder . Adjust the spice accordingly . Add another pinch of hing , salt . Add the fried , crushed curry leaves and cashew nuts . Mix all very well .
  • Kara Boondi is ready . Store it in an air tight container .

Recipe Notes

Check the batter consistency before starting to fry to avoid disappointments . 
Adding roasted peanuts and pepper powder is purely optional as per your taste buds .
