Kanchipuram dosa is a traditional dish of Tamil naidu. It tastes yummy and delicious.

Ingredients
  

  • 2 cup Idly dosa batter
  • 1 finely chopped onion
  • 1 carrot thinly sliced
  • 1 beetroot thinly sliced
  • 1 green chilly minced
  • 1 cup potato masala
  • Oil
  • Ingredientsfor potato masala
  • 2 boiled mashed potatoes
  • 1 onion thinly sliced
  • 1 inch ginger finely chopped
  • 2 green chilli slit
  • 1/2 tspn mustard seeds
  • 1/2 tspn mustard seeds
  • 6 curry leaves
  • 1 tblspn cooking oil
  • 1/4 tspn haldi powder
  • Salt

Instructions
 

  • First of all lets make potato masala. Take a kadai and heat it. Now add oil in it. Now when heated add mustard seeds and cumin seeds, when starts spluttering add curry leaves, green chilli, ginger and saute it for 1/2 min. Now add onion and saute it.
  • Now add salt, haldi powder and boiled mashed potatoes. Stirr continously. Now add little bit water and mix it well. Masala should be mixed well. Off the flame and keep it aside.
  • Now take another kadai adding 1 tblspn oil in it. Now add chopped onion, beetroot and carrot. Saute it and add salt. Mix it and stirr continously till it becomes soft. Switch off the flame. Now lets make Kanchipuram dosa.
  • Heat the tawa or non-stick pan. Brush it with oil if needed. Now pour half katori batter on it. Spread it in a round shape. Now put few drops of oil on it and around it. When the dosa starts getting brown, then spread vegetable stuffing on it.
  • After spreading vegetable stuffing on dosa, spread potato masala on the dosa. Now slowly slowly fold the dosa when it becomes crisp. Serve thos Kanchipuram Dosa with Sambhar and coconut chutney.
