When I was a child I remember my ‘Chandru Periyappa'(uncle) and I used to go for walk daily and while returning home we used to cross an Iyengar bakery. I always used to look forward to come across that place🤥🤥 to smell the aroma of multiple items getting baked, buns, nankhatais and these Kara biscuits. I daily told my peripa to get me nankhatais or Kara Biscuits…sometimes he would, (when he was in a good mood and sometimes he wouldn’t 😄😄!) Now I am a big girl and I can bake my own Kara Biscuits. Here’s the recipe guys which is almost like the bakery ones but I made in whole wheat flour so there might be a difference in taste….ðŸ˜ðŸ˜ but you are going to love them😋 I bet😊😊
1 cup wheat flour
1 pinch baking soda
1 pinch baking powder
1/8 cup ghee or butter
2 tsp brown sugar or white sugar powder
2-4 green chillies
1 tbspn chopped corriander
1 tbspn chopped Curry leaves
Salt to taste
2 tbspn yogurt (sweet not sour)
Sift flour+ baking powder+ Baking soda+ salt.
Beat butter and sugar well to combine.
To butter add flour, curry_corriander leaves, chillies and mix with only tip of fingers to make crumble like texture.
Add curd and bring everything together. Add more curd only if required to make a tough dough. Cover and leave aside for 5-7 minutes
Roll dough and cut using cookie cutter and line on a baking tray.
Bake for 20-25 minutes until golden brown.
