  • Rawa / Suji 2 cups
  • curd 1 cup
  • Salt
  • Water as needed to adjust batter consistency
  • Red chilli powder ½ teaspoon
  • Eno fruit salt 1 teaspoon
  • Green chilli chopped 1
  • For the tampering--1 teaspoon mustard seeds
  • 1 tsp jeera
  • 8 to 10 Curry leaves


  • Whisk up all the ingredients, except the Eno salt. Adjust consistency like Idli batter. Let it stand for 10 minutes. Heat water in a steamer or a big pressure cooker .
  • Place steel ring in the vessel. Grease a cake tin. In the batter, add the Eno salt and whisk very quickly. Bubbles will rise.
  • Pour the batter in the tin. Place it on the ring. Place a heavy lid and cook on slow flame for 15 -17 minutes. Remove from flame and let stand for 5 minutes before de moulding.
  • Prepare the tempering- Heat two tablespoons of oil. Add the mustard seeds, jeera and curry leaves. Let them splutter. Pour over the Dhokhla pieces.
