About Indian Spice Cabbage Masala Fried Rice
Indian Spice Cabbage Masala Fried Rice is my innovation recipe and a fusion of Lemon Rice and Puliogere Rice. The cabbage is the main ingredient of this recipe, which when combined with rice and spice powder, make s a very delicious, flavorful fried rice, that can be eaten as it is or served with raita or green chutney. The spice powder used in this recipe, is prepared freshly at home, and enhances the flavor and aroma of the dish.

Ingredients
- 3 cup Cooked Rice
- 3 cup Cabbage shredded
- 2 tsp Refined Oil or oil olive or any oil
- 1/2 tsp Cumin Seed
- dash Asafoetida or hing hing or
- 1/2 cup Tomato chopped
- 1/2 tsp Turmeric Powder
- 1/2 tsp red chili powder for spice, adjust as per taste
- 1-2 tsp Salt or as per taste
- 1 tbsp Lemon Juice fresh
- Roasting ingredients for
- 1 tsp White Sesame Seeds
- 2 tbsp Grated Coconut
- 4-5 Red Chillies adjust as per your spice preference dry
- 1 tsp Urad Dal
- 1 tsp Chana Dal
- 2 tsp Coriander Seeds
- 1 tsp Cumin Seed
- 1/8 tsp Fenugreek Seeds methi seeds
- 1/4 tsp Mustard Seeds
- Tempering ingredients for
- 2 tbsp Refined Oil or oil olive or any oil
- 3/4 tsp Mustard Seeds
- 1 tbsp Roasted Chana Dal chickpeas
- 1 tbsp Peanuts groundnuts
- 1 tsp Curry or use 1 sprig of fresh curry leaves leaf powder
- 1/2 tsp Turmeric Powder
- a knob Ginger finely chopped or ground half peeled
- 2 Green Chillies slit
- 1-2 tsp Salt or as per taste

Instructions
- Step 1 : Prepare the Spice Powder
- In a heavy bottomed pan, add red chilies, coriander seeds, a teaspoon of cumin seeds, fenugreek seeds, and mustard seeds. Dry roast on low heat for 5 minutes.
- Next add the urad dal and chana dal and dry roast till they turn light golden.
- Now add the sesame seeds and grated coconut and roast till they turn golden brown.
- Turn off the heat. Once all the roasted ingredients are cooled, transfer them to a dry blender or food processor and coarsely grind them into a powder. The spice powder is ready. Keep it aside.
- Step 2 : Cook the cabbage
- Heat a pan. Add two teaspoon oil into it. When the oil is slightly heated, add asafetida and half a teaspoon of cumin seeds.
- When the seeds splutter, add the cabbage and the tomatoes, then add half a teaspoon of turmeric powder, red chilly powder and pinch of salt.
- Cover the pan with the lid and let the cabbage cook, on a low-medium flame, till it is fully baked . You can stir and mix in between. Generally it takes20-30 minutes for the cabbage to cook.
- When the cabbage is done, remove the lid. Increase the heat to medium high and saute for 5-7 minutes so that the excess water evaporates. Keep it aside.
- Step 3: Prepare the tempering and assemble
- Now in another pan prepare tempering using oil and all other ingredients listed under tempering as follows - When the oil is hot, add the mustard seeds.
- When the seeds splutter, add the remaining ingredients( roasted chana dal, peanuts, curry leaf powder, ginger and green chillies). Saute at low medium heat for 2-3 minutes.
- Add the cooked rice, and then the cooked cabbage. Add in 2 tablespoons of prepared spice powder. Stir and mix at medium high heat for 2-3 minutes till the rice and the cabbage are well combined and all the spice powder are mixed together.
- Turn off the heat. Now add a tablespoon of fresh lemon juice. Stir and mix gently. Cover and let it rest for 2-3 minutes. As the rice is warm, it absorbs all the spices and enhances the flavor and aroma of the dish.
- Serve the Cabbage Masala Fried Rice with yogurt, or raita or enjoy as it is !!
