Ingredients
  

  • 150 gm Little Millet
  • 2 egg
  • 85 gm Honey
  • 60 gm Grated carrot
  • 90 gm Brown Sugar
  • 105 gm Coconut Oil
  • 4 gm baking powder
  • 2 gms Psyllium Husk
  • 5 gm Lemon zest
  • 2 gm Cinnamon powder
  • 30 gm Raisins
  • For Frosting
  • 1/4 cup greek style yogurt
  • 1/3 cup cream cheese
  • 2 tablespoon Honey

Instructions
 

  • Dry roast the little millet, allow it to cool down and grind to a coarse powder, should be of Bombay rava texture.

  • Mix the dry ingredients ground millet, baking powder, Psyllium Husk, cinnamon powder and half quantity of sugar together.

  • In another bowl add eggs and half quantity of sugar and whisk until yellow.

  • Next add coconut oil and honey and mix it well.
  • Now add the dry ingredients in three batches and whisk together.

  • Mix in grated carrots, raisins and lemon zest.
  • Transfer to baking pan.

  • Bake for 30 minutes in 180 degree Celsius preheated oven.
  • For frosting, beat yogurt and cream cheese along with honey until smooth. Spread over the cake and enjoy.
