Ingredients
 

  • Dough for
  • 25 gm Flour or soya soya
  • 75 gm Refined Flour
  • 25 gm Desi Ghee
  • Cold Water as required
  • Stuffing for
  • 1 tsp Desi Ghee
  • 20 gm Daal mung dhuli
  • 20 gm Dalia
  • 1 1/4 cup Milk
  • 3 tbsp Milk pwd
  • 100 gm Khoya
  • 35 gm Fruits mix dry
  • 20 gm Coconut pwd
  • 60 gm Sugar pwd
  • 1/4 tsp Cardamom pwd
  • For Nizam-- for nizam
  • 1 tbsp Refined flour
  • 2 tbsp Water
  • For Glaze -- for glaze
  • 1/2 cup Sugar
  • 1/4 cup Water
  • Pinch Saffron
  • 1 pinch Cardamom of pwd
  • For Garnish -- for garnish
  • Pista sliced
  • Silver Warq silver warq
  • Sauce for
  • 1/2 cup Orange Juice
  • 1/2 tsp Cornstarch

Instructions
 

  • In a bowl add soya flour , refined flour and ghee and mix it well.add cold water and make a stiff dough.
  • In a cooker add 1 tsp ghee and dalia and roast for a min add washed mung daal and saute for a min or two ,add milk now pressure cook it for two whistle, put off the flame , let the steam release on its own accord ,
  • after that open the lid and grind it into a paste in a mixi jar , pour this batter in a non stick pan and stir it countinously on low flame.soon it will look like a khoya or a dough.

  • in another pan add 1 tsp ghee , roast the dry fruits and take them out.ln the same pan roast the khoya and let it cool. Now mix khoya, daliya and daal mixture, dry fruits, pwd sugar and cardamom pwd - stuffing is ready.
  • Prepare the nizam with refined flour and water
  • roll out the dough . Cut into circle, apply nizam put some filling and seal it from the edges.
  • preheat the airfrier at 200 .cook the greased gujiya in air frier for 10 min or till golden colour , flip the gujiya after 5 min.
  • prepare the sugar syrup of two thread consistancy . Dip the gujiya in sugar syrup and place on a wire rack. Garnish with pista and silver warq.
  • prepare an orange sauce for garnish and as a dip.Serve these healthy gujiya with orange sauce.
