Gaucuna is a fusion of avocado and tuna
Yield / Serves
1 small can of drained tuna chunks
Slat and pepper to taste
Lea and Perrins Sauce to taste
Peel, stone and dice the avocado and place in a small mixing bowl
Mash the avocado with a fork until there is some paste with some chunks of avocado remaining
Add the tuna, salt, pepper and a few splashes of Lea and Perrin's sauce and fold into the avocado (do not continue to mash)
Taste and additional salt, pepper or sauce as required
Refrigerate until ready to serve
Serve with strips of sourdough toast, crackers or similar
