Green Rice Pulao (Rice With Greens)

Healthy green rice (rice with greens) is a healthy and nutritious recipe prepared with spinach, green peas, green capsicum, coriander leaves and mint leaves alongwith flavours like onions, garlic and green chillies to enhances its taste. The ingredients used in this recipe gives a pleasant green color to the pulao. Green rice is very easy and quick to make too and makes up for an ideal kids lunch box. It is best served with yoghurt or raita or plain papad.

Ingredients
- Spinach leaves palak – 10-12 leaves (chopped roughly)
- Green chillies – 2 to 3
- Fresh coriander leaves – 1/2 cup
- Fresh mint leaves pudina – 1/2 cup
- Cooking oil – 2 tablespoons
- Mustard seeds – 1/2 teaspoon
- Cumin seeds jeera – 1 teaspoon
- Bay leaves tejpatta -3 to 4
- Garlic cloves – 10 to 12 chopped finely or crushed
- Onion – 2 medium sized – chopped finely
- Green capsicums – 2 medium sized – chopped finely
- Green peas – 1/2 cup
- Garam masala – 1/2 teaspoon
- Basmati or plain rice – 1 1/2 cups
- Lemon juice – 2 teaspoons

Instructions
- Wash and soak basmati rice for half an hour. Drain the water and keep it aside Grind spinach leaves, coriander leaves, mint leaves and green chillies with little water to make a soft paste. Keep aside.
- Heat 2 tablespoons of oil in a pan or kadai or pressure pan. Add mustard seeds. Once the seeds stops spluttering, add cumin seeds and bay leaves and saute till light brown.
- Then add garlic cloves and stir-fry till they become light brown. Add chopped onions and saute till translucent. Add capsicum and green peas and saute on a low flame for 2-3 minutes.
- Add spinach paste, garam masala and salt and mix well. Add 3 cups of water and pressure cook upto 3 whistles. Alternatively, you can also cook in a pan.
- In that case, cover the pan with a lid and cook for 5-6 minutes or till the water is fully absorbed by the rice, stirring occasionally. Once the pulao is done, sprinkle lemon juice and mix well
- Serve healthy green rice or pulao hot with raita, potato chips, papads or any gravy of your choice.
