About Granola Yogurt Parfait
Granola is one of the healthiest and easiest breakfast options I’ve come to love—perfectly paired with silky smooth Greek yogurt and your favorite fruits like bananas, strawberries, or blueberries for a burst of flavor. The granola itself is a delightful mix of rolled oats, assorted nuts, and honey or sweeteners, baked until crisp and golden brown. You can easily customize it with any dry fruits like pecans, pine nuts, walnuts, raisins, or dates to make it uniquely yours.
This versatile treat isn’t just for breakfast; granola works wonderfully as an energizing snack throughout the day or even shaped into bars for on-the-go convenience, making it ideal for outdoor activities. Recently, I had the pleasure of using Coombs Grade A Dark Amber Maple Syrup from GoIndiaOrganic, which added a rich, robust sweetness to my granola parfait. Maple syrup, especially the darker grades, brings a deep, complex flavor that elevates baked recipes and makes this parfait truly special.

Ingredients
- 2 cup Rolled Oats
- 1 cup Carrot (Grated)
- 1 cup Walnuts
- 1 cup Pistachios
- 1/2 cup Shredded Coconut (shredded coconuts)
- 1/2 cup Cherries (or raisin raisin and)
- 1/4 cup Melon Seeds
- 1/4 cup Maple Syrup
- 1/4 cup Coconut Oil (virgin)
- 1 tsp Cinnamon
- 1/4 tsp Ginger
- 1/4 tsp Nutmeg
- 1 pinch Cloves (of)
- 1/2 tsp Salt (or as per taste)
- 400 gm Greek Yogurt (vanilla flavored)

Instructions
- Pre heat oven to 200 degree C. Combine the oats, walnuts, pistachios, melon seeds, carrots, grated coconut, maple syrup, coconut oil, cinnamon, nutmeg, ginger, cloves and salt in a large mixing bowl. Toss well till they are perfectly combined.
- Transfer these mixture to a baking tray lined with parchment paper and spread evenly. Bake for 25 to 30 minutes and when it is halfway through, do not forget to stir it before the final round of baking.
- Remove from the oven and let it cool and comes to room temperature. Then add raisins and dried cherries and toss to combine.
- Divide the toasted granola among serving bowls, glasses or even jar like the way I did.Pour the Greek yogurt over it and place some more granola on top along with some fresh cherries. Serve immediately.
- Enjoy this homemade granola immediately, or store in a sealed container and store in a cool place for up to 2 weeks.

Additional Tips
- For an extra crunchy granola layer, spread your granola onto a baking sheet in a thin, even layer and bake at a slightly lower temperature (around 300°F/150°C) for a longer time, stirring once or twice—this helps achieve uniform golden crispness without burning the nuts or coconut.
- If you prefer a vegan parfait, swap Greek yogurt for coconut or almond milk yogurt, and use maple syrup or agave as the sweetener in your granola.
- To add a subtly spicy kick, sprinkle a pinch of ground cardamom or cinnamon into your granola mixture before baking, or layer with a spoonful of spiced fruit chutney between yogurt and granola for a flavor surprise.
- Layer your parfait just before serving to keep the granola crunchy, or serve components separately for a DIY parfait bar—this is especially fun for gatherings or meal prepping individual portions.
