Gluten Free Yellow Corn Flour Khaman Dhokla

Ingredients
- 2 cup Yellow Corn flour gluten free
- 1 tbsp Bansi Rava
- 1 pinch Turmeric Powder
- 1/2 cup Curd
- Salt
- 2 tsp Sugar
- 2 tbsp Olive oil
- 1 packet Eno 4.5 gms
- 1/2 - 3/4 cup Water
- 2 tsp Olive oil
- 1 tsp Mustard seeds
- 2 Green chillies Finely chopped
- 1 handful Curry leaves
- 1/2 cup Water
- 1 pinch Salt
- 1 tsp Sugar I have used Demerara sugar
- 1 tsp Lemon juice

Instructions
- Mix Yellow corn flour along with Bansi rava, Turmeric powder, Curd, Salt, Sugar and Olive oil in a large pan. Add water little by little, mix well and prepare batter without any lumps.
- The consistency batter should not be too thick or too thin. Grease a wide pan with oil and keep aside.
- Add eno to the corn flour batter and mix well. ( Mix eno only at the time you are going to steam ). Pour the batter to the greased pan and steam it for 25 - 30 mins in a medium flame or till the skewer comes clean.
- Once done, remove from the flame, cool it for 5 to 10 minutes and then invert to a plate. Heat oil in a pan and add mustard seeds. Once it starts spluttering, add finely chopped green chilies followed by curry leaves, water, salt and sugar.
- Add the lemon juice and let it boil. Pour seasoning / tadka water on the dhoklas and serve. Serve with Mint curd chutney.
