About Gluten Free Rice Flour Chocolate Cake
One of our friend asked us to make or teach her GLUTEN FREE cake as her son is hyperactive and is not allowed to eat SUGAR,BUTTER and any food that contains gluten as it increases his energy more.
I told her that i will try to make the chocolate cake with gluten free flour which we get in the market. Her son also took promise from us that we get him the cake next day.
We went to the store to get the gluten free flour but unfortunately the flour was out of stock.Since we promised the boy to get the cake next day ,We thought of trying with some other gluten free flour which is easily available.
We had heard of a rice flour cake so we wanted to give a try but with our own twist, SUGAR replaced with JAGGERY and BUTTER replaced with OIL.We also used tapioca(sabudana) flour because it adds a bit of springiness to your baked goods.
The next day we gave the cake to the boy to taste. He was so happy and loved the cake.
The Smile one the boy's face made our day :).

Recipe Time & More
Ingredients
- 11/4 cup Rice Flour
- 1/4 cup Tapioca (sabudanaflour)
- 1/4 tsp Salt (or as per taste)
- 1/2 tsp Baking Powder
- 1 cup Warm Milk
- 1/2 cup Curd
- 1/2 cup Oil
- 3/4 cup Jagerry
- 1 tsp Baking Soda
- 1 tsp Vanilla Essence

Instructions
- Pre-heat the oven at 180 degree. Grease and dust the tin with flour.
- Sieve the flours(rice and tapioca) ,baking powder and salt together about 4 -6 times.
- Melt the jaggery with two tbsp of water on gas or in microwave and keep aside to get it cooled.
- Mix the milk, melted jaggery , curd, oil and vanilla essence until well combined.
- Add baking soda to the above and mix. Set aside for 3-5 mins.Tinny bubbles will start appearing in the mixture.
- pour the above mixture into the sifted flour and mix well until no lumps remaining .Do not over -mix.
- pour the above batter into the baking tin.
- Bake in the pre heated oven at 180 degree for 40 mins or until the skewer inserted comes out clean
- Take the cake out from the oven and let it cool . Now its ready to get it served.
Recipe Notes
If u find the cake to be little hard on top, can sprinkle jaggery syrup(1 tbsp of jaggery melted in 2 tbsp of water)on top to make the cake more moist.
