Madeleine are traditional mini cakes from northern France.
Madeleines are small sponge cakes with a distinctive shell like shape acquired from being baked in pans with shell shape depression. I made a glaze and dip half Madeleine's in it so they look pretty and taste also wonderful

  • Met butter and let it cool to room temprature
  • Beat eggs with vanilla and salt until light in colour
  • Add sugar gradually and beat 5 to 10 min.until mixture thick and drop down in ribbon consistency
  • Sift a third of flour in egg mix and fold it in after each addition
  • Take about half egg mix and add in cooled butter then mix this in remaining egg mix and fold it
  • Cover with cling wrap and keep in freeze for 90 min.
  • Preheat ovan band brush mould with butter and pour battar in mould
  • And bake for 10 to 12 min.at 180 degree till edges turn to lightly brown
  • Remove from ovan put on wire wrack
  • Make glaze with given ingredients and dip half of each madeleines
