Fish should be bone less try to pieces same size. Marinate with vinegar and salt for one hour.

Sauteed fish in refined oil. Let it cool. Then add paste red chilli powder sugar one tsp acidic mix well gently with fish.
Keep in a clear glass vessel add oil as required. Tight the lid for a week.
Should be in freeze and kept six months or more.
