Eggplant Affair – A Fusion Dish

Celebrity Chef prepares this eggplant delicacy which brings out the true flavour of Eggplant. With peanut topping which adds a crush to this dish. It can be used as a dip for Lavash or Pita bread.

Ingredients
- For Creamy brinjal topping
- Brinjal 1 Large
- Garlic Paste 1/2 teaspoon
- Cumin powder 1/2 teaspoon
- Chilli powder 1/2 teaspoon
- Hung curds 2 tablespoon
- Tamarind pulp 1 tablespoon
- Tomato 1 de- seed and diced
- Onion 1/2 finely diced
- Salt
- For Crunchy Peanut topping
- Oil 2 tbsp
- Mustard seeds 1/2 tsp
- Green chillies 2 finely chopped
- Curry leaves 7 sliced
- Peanuts roasted, skin removed and roughly chopped 100 gms
- Sesame seeds lightly roasted 20 gms
- Fresh coriander 2 tbsp
- Salt

Instructions
- To make Brinjal topping Rub the brinjal with oil and roast directly over a flame, turning constantly till done. When done, remove from flame, cool slightly, peel and chop.
- Mix the chopped brinjal with all the remaining ingredients and keep aside.
- For making Peanut topping -Heat oil in a pan; add mustard seeds, curry leaves, and green chillies, and fry for 1/2 a minute.
- Add the crushed peanuts, sesame seeds and finish with fresh coriander.
- For Making Brinjal Fry - Take the brinjal slices and rub it with red chilli powder, chat masala powder and salt.
- Coat the slices with bread crumbs and fry in the Air Fryer, which lets one enjoy fried food with minimal oil, till golden brown.
