Ingredients
- 2 cup Whole Wheat Flour
- cup Refined Oil (¾)
- 1 cup Curd
- 1 cup Organic Jaggery
- 10 pieces Dates (roughly chopped)
- 1/4 cup Raisins
- 2 tsp Cinnamon Powder (quantity can be decreased to tsp also)
- 1 tsp Ginger Powder (dry)
- 1/2 cloves Powder 1/2 Tsp (powder)
- tsp Baking Powder (½)
- 1 tsp Baking Soda
- 1 / Nuts (walnuts, almonds etc. - cup finely chopped.)

Instructions
- Pre-Heat the oven at 180°C and grease the baking dish or cake tin.
- Soak chopped dates and raisin in water for about 15 minutes.
- Sift and Mix all dry ingredients in a bowl - Whole wheat flour, baking soda, baking powder, cinnamon, dry ginger and clove powder.
- In a separate bowl, add oil, curd. Melt jaggery in a microwave/on a Gas stove for 1 minute and add into the mixture to form a smooth puree.
- Add both dry and wet ingredients to form a nice batter. Now add soaked dates and raisin. Add little water, if the batter gets too thick.
- Pour the cake batter into the baking dish/tin. Sprinkle some crushed nuts on top of the batter.
- Now bake the cake for 30-35 minutes at 180°C or until a toothpick inserted comes out clean.
- Let this cool down completely. Now remove this from the baking dish/tin and cut into pieces. Serve this with a cup of tea/coffee. Enjoy!
