Eggless Chocolate Muesli Cookies

Healthy chocolate cookie with the goodness of peanut butter, muesli or oats and honey in every bite!! You can serve them baked or as a no-bake treat!

Ingredients
- ¼ cup peanut butter crunchy or creamy
- 3 tablespoon honey
- 3 tablespoon cocoa powder
- 1 ½ cups muesli or oats
- Few drops vanilla essence optional
- White chocolate chips for topping optional

Instructions
- Grease a baking pan and keep aside. Place the peanut butter in a saucepan. Melt peanut butter on low heat till fully melted.
- Remove from heat and add honey. Stir in muesli, cocoa powder and vanilla essence. Transfer to a bowl and mix to form a dough.
- With oiled hands, take one tablespoon of dough each and make small balls. Flatten the balls to cookie shape and place on greased pan. Top with chocolate chips.
- At this stage, for a no-bake version, you can choose to chill it a little and serve it.
- For a baked version (which you can store in an airtight container over the counter), bake for about 6 to 8 minutes in a preheated oven (at 350 degrees Fahrenheit or 180 degrees Centigrade) to set the cookies.
- Take it out of oven and gently press white chocolate chips over each cookie and serve when when cool. Chocolate chips have been added only for decorative purposes.
- Store unbaked cookies in the refrigerator and the baked ones in an airtight container on the counter.
