It’s a simple one pan ready to eat under one hour recipe. Plus it’s tasty and healthy too. Just two main ingredients are required minced/cubed chicken and eggs. Rest any veggie available in your pantry can be added and it will turn out equally tasty.
3/4th cup cubed chicken pieces or minced chicken
1 cup spinach, chopped finely
2 medium onions, chopped finely
2 tbsp milk
1/2 cup grated cheddar/mozzarella cheese
1 tsp salt
1 tsp red chilli powder
1 tsp minced garlic
1 tbsp oil
Heat 1 tbsp oil in a pan.
Add garlic saute for few seconds and then add chicken.
Add 1/2tsp of salt and 1/2 tsp red chilli powder and saute for minute.
Add chopped spinach and again saute for a couple of minutes.
Now line a pan with parchment paper and spread the sauted chicken and spinach in the pan.
Preheat oven to 180°C.
Now in a mixing bowl add eggs, 1/2 tsp of red chilli powder, 1/2tsp of salt, milk and mix well.
Now pour this egg mixture evenly all over the chicken and spinach such that it's covered completely.
Add the grated cheese on top and put in the oven.
Bake for 35 min or until top is light golden brown and eggs are firm. Serve with choice of sauce.
