Dum Aaloo
Ingredients
- Baby Potatoes
- 6 Red Onions
- 8-10 cloves Garlic
- Ginger
- a Tomato half
- Turmeric Powder
- red chili powder
- Cumin Powder
- 1-2 tsp Salt or as per taste
- Garam Masala

Instructions
- Boil the potatoes with their skin on. After boiling, peel off the skin and keep aside. Cut 3 onions into thin slices and grate the rest. Also grate the garlic, Ginger and tomato.
- Heat oil in a pan and then fry the thinly sliced onions till they are golden brown and crunchy. This will be used for garnishing. Keep the onions aside and lightly fry the potatoes and take them out.
- Add the grated onion, ginger, garlic and tomato mix and fry them. Add salt. In another bowl, mix 1tbsp cumin powder, 1/2 tbsp turmeric powder, Red chilli powder(according to taste) and salt with a little bit of water to make a loose paste
- Fry the onion garlic mix for a couple of minutes till you get a good aroma of the garlic, then add the spice mixture to it. Fry it for another 3-4 minutes and then add the potatoes and fry it well till the potatoes are properly coated in the mix
- After the potatoes are properly coated in the spice mix, add a little bit of water and let it cook till you get a thick gravy. Finally add a little bit of garam masala powder, and mix it well.
- Take it off the heat and garnish with the previously fried onions.
