A handful of dryfruits is always suggested to eat every day. But sometimes we get bored of eating those soaked dryfruits. So for a change we can include them in our daily food. Dryfruits pulav is one such healthy recipe..

Ingredients
  

  • Basmati Rice 1 1/2 cup
  • Ghee 1 tbsp
  • Cashews/ kaju 10-15
  • Almonds/ badam 10-15
  • Raisins/ kishmish 1 tbsp
  • Walnuts/ akhroat 1-2 tbsp
  • Black pepper corn/ kali mirch 8-10
  • Lavang 2
  • Black cardamom / badiya elaichi 1
  • Green cardamom / chotu elaichi 3-4
  • Common stick / dalchini 1 inch
  • Mace / jav itri 1 strand
  • cloves / lavang 2
  • Nutmeg powder 1/ 4 tsp
  • Cumin seeds / jeera 1/2 tsp
  • Rosewater / Gulabjal 1 tbsp
  • Bay leaves/ Tez patta 2
  • Salt

Instructions
 

  • Wash and soak rice for 30 min.l
  • In a pressure cooker heat ghee and add cumin seeds. Once it changes colour add tez patta Kali mirch lavang jav itri dalchini choti elaichi badi elaichi
  • Cook for 30s & add all dryfruits. Cook for a min.
  • Add soaked rice nutmeg powder & salt. Mix it smoothly so that rice may not break as it is soaked. Cook for 2 min.add rosewater
  • Add 3 cups of water. Bring it to first whistle. Lower the flame and let it cook until next whistle. Switch off the flame. Wait for pressure cooker to cool down.
  • Serve it with shahi paneer or dal makhnig

Notes

  • While washing rice do not rub it alot as it breaks the grains
  • While frying whole spices & dryfruits maintain low flame to avoid them burning
