A dossa educated in Italy

  • 2-3 ripe tomatos
  • 2 -3 pods garlic
  • 1 finger ginger
  • 2-3 red whole chilly
  • 3 tsp olive oil for emulsification
  • 1 tsp Sugar or more if u like it a litte tweet
  • Cheese slice
  • half inch stick of cumin
  • Bacon optional


  • Grind ingredients finely and fry in a pan till rawness goes off. Since this will be put on a dosa and not in a oven, the rawness of the tomato will be there
  • Spread the dosa batter (as thin or thick as u like). Once a little firm spread the sauce
  • Add the cheese slices  and cover it with a glass cover to see whats going on and so it does not burn. Wait till the cheese melts. Cut and eat !!You can also add chicken, bacon, onions, mushrooms etc to keep it interesting.


It can be customized to suit both thin crust kinds (spread thin and make crisp) or pan tossed (uthappam style)
