My family loves to have soup for dinner. In general, I prepare some salads or bread to accompany with soup. Yesterday when I was about to bake a fresh bread loaf for dinner, I found some left over Dosa stuffing in my refrigerator and some boiled potatoes as well. I changed my plan and thought to bake Stuffed dinner rolls this time. All were happy in the family and my stuffed rolls got vanished in just 15 minutes.

Yield / Serves
All-Purpose flour 350 gm
Sugar 1 tsp
Instant Yeast 5 gm
Potato (Boiled Mashed) 1/3 cup
Water 200 ml
Fried Potato – Onion Masala ½ cup
Olive Oil 2 tbsp
Salt 1 tsp
Sesame seeds 1 tbs
In luke warm water, add sugar and yeast. Stir it well and keep it aside until it froths. In a bowl, add Flour, salt and mashed potatoes. Mix all the dry ingredients well. Add the activated yeast mixture to the flour and knead it.
It will be sticky initially, hence take some oil in your hand and knead it for another 10 min. Add dry flour only if it is required.
After 10 minutes of kneading, you will get a soft dough. Place it in a greased bowl for first proofing and cover it with cling wrap. Let it rest for about 40 minutes or until it doubles in volume.
Once the dough doubles in volume, punch the dough to release the air and take it out on a dusted surface. Knead it for another 5-10 min.
Divide the dough into 6 equal parts. Roll the each part and put some stuffing into it. Fold all the corners and seal all the edges properly. You can shape stuffed dough balls into any desired shape. I tried to shape them into different animals.
Place all the stuffed dough balls in a greased baking pan. Cover it and let it rest for second proofing. It will approximately take 30 minutes. Meanwhile, preheat the oven at 200 degree Celsius for 10 min.
Give a milk wash to the rolls. You might also like to add Sesame seeds on the rolls. Bake them at 200 degree Celsius for 20 minutes (temperature and time can vary depending upon size of your Oven).
Once done take these out of oven and brush with olive oil. Serve hot.
