This is one of the easiest and basic recipes of chicken that I had learnt. Subtle and usage of minimalistic spices yet absolutely delightful to the palate.

  • Chicken with bones - 500 gm
  • Ginger garlic paste - 2 tsp
  • Onions chopped - 2
  • Red chilly powder - 1 tsp
  • Garam masala powder equal ratios of cardamom, cloves and cinnamon, powdered together - 1 tsp
  • Salt as required
  • Bay leaf - 1
  • Refined oil as required
  • Curd - 1 cup
  • Coriander leaves handful


  • Marinate the chicken with ginger garlic paste, red chilly powder, garam masala powder, curd, salt. Let it marinate for about 30 minutes.
  • Now heat a heavy bottomed wok with required amount of oil.
  • Once the oil is heated, add the bay leaf followed by the chopped onion.
  • Saute the onions till they turn golden brown in color. Then add the marinated chicken along with marinade in the bowl.
  • Give this a stir and let it cook on a low flame with the lid on and intermittent stirring.
  • Once the chicken is done, add little water for the gravy and bring upto boil.
  • Sprinkle ample amount of chopped coriander leaves. Check for the seasoning and serve with some steamed rice or roti.
