Ingredients
- 1 Cucumber large
- 1 White Onion or red onion, small
- 1/2 tbsp Pumpkin Seeds
Salad Dressing
- 1 tbsp Olive oil extra virgin
- 1 teaspoon Salt or sea salt
- 2 pods Garlic
- 1 tbsp Sesame seeds roasted

Instructions
- Wash and Cut Cucumber from the edges. Do not peel it as most of the health benefits are just under the skin (go for organic ones). Chop Cucumber in any shape. I had thinly sliced it for this particular recipe.
- Peel and wash onion and thin slice it.
For the Salad Dressing
- In a Bowl, Add olive oil, peel and chop garlic pod, Dry roast sesame seeds till the brown colour starts showing up. Add roasted sesame seeds to the dressing, mix it well with the whisk or spoon. let it sit for 10 minutes
- Dry Roast pumpkin seeds separately and add to the cucumber and onion.
- Just before serving the salad, Add salt into the dressing and pour it over cucumber and onion.
- Toss all the ingredients and enjoy your crunchy cucumber onion salad.
Notes
- Do not add salt till you serve otherwise cucumber leaves the water and it makes the salad soggy.
