Cucumber Noodles Salad

The salad is sweet, sour and has noodles..! Yes you heard it right, Cucumber noodles tossed in a yummy homemade sweet and sour dressing. It's a refreshing salad for the hot summer days.

Ingredients
- 2 cucumbers medium, peeled
- 1/2 cup red onion chopped
- 1/2 teaspoon Sugar
- 1/2 teaspoon red chilly flakes optional
- 1 tbsp lemon juice
- 1/2 teaspoon white sesame seeds
- Few raw mango julienne
- Red cabbage shredded, for garnishing
- Few Mint leaves

Instructions
- Attach the julienne blade to the mandoline and adjust it to the 1/8-inch-thick setting.
- Applying medium pressure, carefully run one of the cucumbers down the blade to form noodles, slicing until you reach the core.
- Rotate the cucumber a quarter turn and continue slicing and rotating until you've cut the entire cucumber.
- In a large bowl add chopped red onion, sugar, red chilly flakes, thin julien's of raw mango and cucumber noodles. Cover the bowl with plastic wrap and refrigerate the cucumber noodles for 30 mins.
- When ready to serve add lemon juice and sesame seeds from top mix it well and Serve Chilled.. Garnish with mint leaves and shredded red cabbage. Enjoy this salad on hot summer days.
