Cucumber Mint Granita is sweet, sour and fragrant, this is the perfect summer refresher. Pickled Cucumber gives an extra crunch and taste to it.

Ingredients
  

For Granita

  • 2 cucumbers seeds removed and roughly chopped
  • 1/2 cup mint leaves
  • 1 tsp black salt
  • 2 tbsp lemon juice
  • 2 tbsp natura sugar free

For Pickled Cucumber

  • 1 cucumber seeds removed and finely diced
  • 1/2 cup water
  • 1/2 cup vinegar
  • 2 tbsp natura sugar free
  • 1 pinch black salt
  • 1 pinch plain salt

Instructions
 

  • Add all the ingredients of Granita in a grinder and grind to a puree
  • pour it into a large flat container and freeze.
  • About every 30 minutes stir and/or scrape the mixture to break it up. You can use a fork to shave it.

For pickled cucumber

  • In a sauce pan add water, vinegar, black salt, plain salt and sugar free natura.
  • When it comes to a boil add finally chopped cucumber.
  • After the first boil drain the cucumber and let it cool.

To serve

  • Scoop a generous tablespoon of the pickled cucumber in little shot glasses.
  • Top two tablespoons of scraped granita. Garnish with mint leaves. Enjoy immediately.
