Crunchy cucumber and tomato salad is ideal as a snack or accompaniment with lunch or dinner. It is delicious and ideal for calorie conscious.
Yield / Serves
2 tomato red and firm
1 tbsp peanut powder
1tsp olive oil
1 tbsp chopped coriander
salt to taste
Wash the cucumber and pat dry. Cut into small pieces.
Slice the tomatoes into small pieces.
To make the peanut powder, roast a cup of peanuts on slow flame. They should have brown spots on them. Allow to cool. Then, grind it to a coarse powder.
Add one tablespoon of peanut powder to it. Put salt and olive oil. Mix well.
Garnish with coriander leaves and lime juice.
No need to discard the skin of peanuts.
