This recipe would be perfect to impress your family and friends. it is simple but delicious, and both novice and advanced bakers can try this out at home with a great deal of ease. The ingredients are not hard to acquire, and young and old will love your delicacies.

- 135 butter at room temperature (if you are using unsalted, add ¼ teaspoon of salt into your batter while beating)
- 120 gms castor sugar
- 1 large egg
- 1 tsp vanilla extract
- 260 gms all-purpose flour
- ½ tsp baking powder

Instructions
- Cream the butter and sugar by beating together for 3-4 mins. Add the egg and vanilla extract and mix well.
- In a separate bowl, whisk together the flour and baking powder. Add the flour mixture to the creamed butter paste and beat on low speed until incorporated.
- Transfer the dough to a lightly floured surface and knead a few times to bring it together. Divide the dough in half, wrap up each half on wax paper or cling film and refrigerate for an hour (you could also go overnight if you want).
- After removing from the refrigerator, use a 2.5 - 3 inch cookie cutter to cut out the cookie dough.
- Heat your oven to 180 degree C and line a cookie sheet with parchment paper.
- Bake the cookies for 15 - 20 mins depending on the kind of oven you use, or until the cookies are a light golden brown
- Remove from the oven and place on the wire rack to cool. You could serve the cookie sandwiched between a chocolate ganache, Nutella, or any jam or fruit preserve of your choice
