- 4 Brinjal equal sized
- 1/2 cup Flour
- 1/4 cup Rice Flour
- 1 tsp Kashmiri Chili
- 1 tsp Couscous seeds
- 1 tsp Cumin Powder
- 1/4 tsp Asafoetida
- Oil for deep frying
- 1-2 tsp Salt or as per taste

Instructions
- Cut the brinjal vertically without removing the stem. Immediately immerse it in water to keep it firm and prevent discoloration.
- In a mixing bowl, combine gram flour, rice flour, cumin powder, Kashmiri chili powder, asafoetida, couscous seeds, and salt.
- Make a smooth batter adding water. It should be perfect consistency.
- Heat oil in a deep wok. Dip the brinjal slices into the batter, ensuring they are well-coated, and then fry them until golden and crispy. Serve the crispy fried brinjal hot and enjoy!
