  • Cut the brinjal vertically without removing the stem. Immediately immerse it in water to keep it firm and prevent discoloration.
  • In a mixing bowl, combine gram flour, rice flour, cumin powder, Kashmiri chili powder, asafoetida, couscous seeds, and salt.
  • Make a smooth batter adding water. It should be perfect consistency.
  • Heat oil in a deep wok. Dip the brinjal slices into the batter, ensuring they are well-coated, and then fry them until golden and crispy. Serve the crispy fried brinjal hot and enjoy!
