Simple, quick, mildly sweet and healthy with cottage cheese, figs and coconut flour making it gluten free as well. It is very easy to prepare also. Just 10 min of prep time and it goes in for bake. Creamy yet crumbly and a guilt free sweet indulgence.
200gm cottage cheese, crumbled
1/2 cup milk
8-10 dried figs
6 tbsp coconut flour
4 tbsp brown sugar
1/2 tsp baking powder
A pinch of salt
In saucepan take milk and add figs to it.
Bring it to simmer on lowest flame.
Take it off the flame and keep it aside to cool down. This will impart a slight fig flavour to the milk.
Grease a 6 inch round pan with butter.
In a big clean bowl take the eggs and add sugar to it.
Beat it with a hand mixer till its fluffy about 2 min.
Add coconut flour, salt, baking powder, crumbled cottage cheese and beat everything just till well incorporated.
Preheat oven to 200°C.
By now the milk would have cooled off. Take the soaked figs out of it and add the milk to the batter.
Whisk the milk properly in the batter. The consistency of the batter will be thick like paste.
Now chop the soaked figs and stir in the batter or you may just place them on top as per your liking. I stirred some in the batter and on top as well.
Bake for 35 min. Check the doneness by inserting a tooth pick. If it comes out clean the cake is baked.
Take it out of oven and let it cool completely.
