when you think of a cheesecake, the first thing that comes to your mind is a creamy cream cheese layer poured on top of a crispy biscuity base. plattershare gave me coconut sugar so i decided to flavour my cheesecake with coconut and give it a twist. so check this out,

Ingredients & Quantity
  • coconut sugar- 1/2 cup
  • condensed milk- 1/4 tin
  • paneer or cottage cheese- 1 cup
  • coconut milk- 1/2 cup
  • elaichi powder- 1 tsp
  • milk powder- 1/2 cup
  • digestive biscuits(crushed)- 1 pack
  • melted butter- 3 tbsp
  • chopped nuts- to garnish
How to cook?
  1. add melted butter to crushed biscuits and push the mixture on the bottom of a cheesecake pan like a springform pan or a tart pan.

  3. for the coconut kalakand, add coconut milk, condensed milk, milk powder, crumbled paneer, coconut sugar in a bowl and mix well,

  5. pour the mixture in a pan and cook till it becomes thick, at first it will be thin, but then it would gradually thicken. also add elaichi powder,

  7. keep cooking till the mixture becomes thin and starts to leave the sides of the pan. the mixture would have become grainy,
  8. Coconut Kalakand Cheesecake
  9. pour the kalakand on top of the biscuit base and put it in the fridge till set. garnish with chopped nuts and serve chilled.
