Chutney With Sponge Gourd Skins

One of the healthiest green is sponge gourd it is also known as lufa. Sponge gourd intake of vitamin c it can reduce skin dryness, wrinkles and slow down the ageing. I made an innovative chutney with skin of torai. Always try to sort out the tender and green skins. Now we are under lockdown period. I thought I will add tamarind and fresh coconut but now we have no choice we have to manage whatever we have. Instead of tamarind. I added homemade mango pickle and instead of fresh coconut I added coconut powder. For this recipe garlic is optional. I used soft coriander stems because it is more aromatic than leaves.

Ingredients
- 1/2 cup sponge gourd skins
- 1 tbsp peanuts
- 1 teaspoon raw ginger
- 2-3 green chillies
- 4-5 garlic cloves
- 1 tbsp mango paste
- 1 tbsp oil to saute
- 1 teaspoon cumin seed
- 1 teaspoon mustard seeds
- Pinch of asafoetida
- Pink salt to taste
- Fresh coriander leaves

Instructions
- Peel off the skin of sponge gourd then boil, so the raw smell will go off.
- Take a pan add oil, cumin seeds, mustard seeds and asafoetida. Then add the boiled skins and saute for a few minutes.
- After cooling make a paste with adding peanuts, raw ginger, raw garlic, green chillies, salt, mango paste and coriander stems.
- After a smooth paste it is ready to serve. This type of recipe we never find in five star hotel or resturant.
