Just like the name says, this is the chocolate chip cookie extraordinaire as it has an addition of healthy Oo Mugi Barley grains!!!! Definitely one of my favorites!!!!

Ingredients
- Salted butter softened- 150 gm.
- Granulated sugar- 80 gm.
- Light brown muscovado sugar-80 gm.
- Vanilla extract-02 tsp
- Large egg-01 no.
- All- purpose flour-175 gm.
- Barley grains lightly tosted-50 gm.
- Bicarbonate of soda-½ tsp
- Salt-¼ tsp
- Chocolate chips or chunks-150 gm.
- Chopped nuts Almonds and walnuts- 80 gm

Instructions
- Preheat the oven to 190ËšC / 170ËšC fan / gas. Line two baking trays with non-stick butter paper/ baking paper / parchment paper. Take a bowl put the softened butter and sugars and beat until creamy. Add in the vanilla extract and egg.
- Sieve the flour, add lightly toasted barley grains, bicarbonate of soda and salt over the mixture and mix in with a wooden spoon lightly. Add the chocolate chips and stir well. Stir in chopped nuts.
- Using a teaspoon, place small amounts of the mixture well apart on the baking trays. Bake in the oven for 10 minutes until light brown on the edges and still slightly soft in the centre.
- Leave on the tray for a 03 to 04 minutes to firm up and remove to wire racks to cool completely. Goes best with hot milk.
Notes
Muscovado is a type of partially refined to unrefined brown sugar with a strong molasses content and flavour.
