Chocolate And Bottle Gourd Fudge

This is an amazing cross between Desi Lauki ka halwa and chocolate fudge. The combination is very mouth watering. Made with minimum ghee required, this Bottle gourd and chocolate fudge is going to be a main attraction for the festive season

Ingredients
  

  • 100 gm fresh cream
  • 200 gm chopped dark chocolate
  • 1 kg bottle gourd peeled and grated
  • ¾ cup sugar or to taste
  • ½ tsp cardamom powder
  • ¼ cup slivered almonds
  • 1 tablespoon ghee

Instructions
 

  • To start add the ghee in pan and add grated bottle gourd, sauté till it starts releasing its water
  • Add sugar and mix well. Cook till all the water from bottle gourd is absorbed and its is a glossy halwa mixture
  • Add cardamom powder, mix and remove from heat and let it cool down
  • In another pan heat the cream till bubbles start appearing on it, then remove from heat and add the fine chopped dark chocolate and mix till the chocolate melts and it is an even mixture
  • Prepare a square fudge tin or a plate by either greasing it with some ghee or placing a parchment paper over it
  • Now on this prepared tin or plate pour the cream and chocolate mixture and pop it in fridge for some 15 minutes
  • After 15 minutes take it out and spread the bottle gourd halwa evenly over it. Using a sharp knife mark (just mark don’t cut as yet) even square pieces cuts and on each square add an almond sliver. Again pop it in the fridge to chill
