Instructions
- Fine chop cranberries and pistachios and keep aside
- In a mixing bowl combine together oats, coconut sugar, coconut flakes, chopped pistachios and cranberries. Reserve some of the cranberries and pistachios for topping up later
- Add half of the coconut oil to this and mix well
- Toss this mixture in a baking tray and bake at 170 degrees for 10 minutes in a preheated oven or until nice and golden. Stir it once in between.
- In the meantime melt the remaining coconut oil in a small pan, remove from heat and add the cocoa powder to it and make it even mixture. Add honey and again mix well.
- Take out the baked oats mixture from oven and add the liquid mix to it. Mix it all really well so that all the ingredients are combined with each other.
- Line a baking tray with some parchment paper and pour the prepared mixture on this tray.
- Press it with the help of a spatula pushing down to set it on the tray, sprinkle the remaining chopped pistachios, cranberries and the chocolate chips over it and press down a little so that they also set over the bar.
- Chill this in the fridge for an hour and cut out the bars or just break some uneven chunks out of it and enjoy. You can store them in an air tight container up to a week in fridge.
