About Chilli Soya Chunks Noodles
Noodles have this "Unhealthy" tag that I do not agree with, as One can easily turn it into Super-Healthy, yet just as yummy a dish.I always choose whole wheat noodles, a bunch of vegetables I can lay my hands on and minimum oil.This time,I tossed in Soyabean Chunks and was pleasantly surprised with how compatible all the flavours were.

Ingredients
- 1 cup Soya chunks
- 75 gm Noodles or whole wheat noodles
- 1 Green Capsicum
- 1 Onion small
- 1 cup Cabbage sliced
- 2 whole Red Chillies
- 1 Green Chillies
- 1 tsp Red Chilli Sauce
- 1 tsp Green Chillies or sauce
- 1 tbsp Tomato Ketchup
- 1 pinch Salt or as per taste
- 1 tsp Soya Sauce (optional) I did not add
- 4 pods Garlic
- 2 tbsp Oil
- 6 cup Water

Instructions
- Chop the onions, capsicum into thin slices. Chop the garlic into small pieces.
- Soak the whole red chillies in little water for about 20 minutes.
- Meanwhile, take 2 cups water in a pan.
- Bring it to a roaring boil
- Add in the Soyabean chunks and cover with a lid
- Shut off the flame and let it stand for 15 minutes.
- In another big pan, add 4 cups of water and boil.
- Add the noodles with a pinch of salt and 1 teaspoon oil.
- Let it boil on full flame till the Noodles are almost cooked. ( 5 to 7 minutes )
- Drain in a sieve and run cold water 2 to 3 times to stop the cooking process and so that the noodle strands do not stick to each other. Keep aside.
- Now, Grind the soaked red chillies to a paste. Add green chilli, red chilli sauce, green chilli sauce, tomato ketchup and give a whisk. Remove in a bowl.
- Heat a non stick pan and add 1 tablespoon oil. Keep the flame low.
- Drain the soaked soyabean and squeeze out the water. Wash them in running water 3 more times, squeezing out the water each time. Now, Toss them in the pan and stir fry till light colour change.
- Remove them and in the same pan,add the garlic pods.
- Let them fry till light golden brown and toss in the vegetables-Onion, Cabbage and Capsicum.
- Keep the flame high and stir fry them for just a minute so that they remain crunchy and crisp.
- Lower the flame and add the soya chunks, the ready chilli-sauces mixture.
- Let them cook for a couple of minutes to let the vegetables and Soya chunks take in the flavours.
- Lastly, add the Noodles and toss gently so that everything comes together.
- Garnish with green spring onion and serve hot.
Recipe Notes
- Add a bunch of vegetables you like.
- I added the ones I had in hand, so one can add more like carrots etc too.
- Adjust Spice level as per choice as this one is Super-hot.
