Ingredients
- 100 gm Strawberry frozen
- 200 gm Peach fresh
- 100 ml White Wine
- 1/2 cup Champagne or as required
- 1 pod Beans vanilla
- 2 Star Anise
- 100 gm Sugar
- 100 ml Water

Instructions
- In a pan add sugar and cook till sugar start to caramelize. At this stage add little water to avoid burning of sugar.
- Now add white wine little at a time and glaze the pan. Add vanilla beans and star anise.
- On a slow flame let the vanilla and star anise to release flavor.
- At this stage add fresh dices of peaches. Cover the pan with lid and allow simmering until peaches are soft. Keep some fresh peaches for garnish.
- Now add frozen strawberry and cover the pan. Bring to the boil and simmer for 20 minutes on low flame. Keep some strawberries for garnish.
- Remove from fire and allow cooling down. By using blender make a smooth mixture.
- Finally add champagne to get the soup consistency and chill in fridge
- When serving to guest add diced strawberries and diced peaches.
