  • In a pan add sugar and cook till sugar start to caramelize. At this stage add little water to avoid burning of sugar.
  • Now add white wine little at a time and glaze the pan. Add vanilla beans and star anise.
  • On a slow flame let the vanilla and star anise to release flavor.
  • At this stage add fresh dices of peaches. Cover the pan with lid and allow simmering until peaches are soft. Keep some fresh peaches for garnish.
  • Now add frozen strawberry and cover the pan. Bring to the boil and simmer for 20 minutes on low flame. Keep some strawberries for garnish.
  • Remove from fire and allow cooling down. By using blender make a smooth mixture.
  • Finally add champagne to get the soup consistency and chill in fridge
  • When serving to guest add diced strawberries and diced peaches.
