Chicken Kofta biryani is made out of chicken mince. When you place an egg inbetween the koftas its non other than Nargisi Kofta biryani.

Ingredients
  

  • 500 gms Chicken mince
  • Salt
  • 2 tson Chopped fresh coriander
  • 2 chopped green chillies
  • 1 medium onion finely chopped
  • Red chilli powder as per taste
  • 1 teaspoon coriander powder
  • 1/2 teaspoon all spice powder
  • 1 teaspoon Ginger garlic paste
  • For Biryani Masala. In a bowl add
  • 1/2 tspn red chilli powder
  • 1 Tbspn Ginger garlic paste
  • 1 Tbspn coriander powder
  • Salt
  • 1 tspn shazeera
  • 4 green cardamoms
  • 1 Bay leaf
  • 1/4 teaspoon Turmeric Powder
  • 1/4 teaspoon zeera powder
  • 6 black pepper corns
  • For Biryani rice
  • 3 cup of basmati rice
  • few saffron strands
  • 4 cardamon pods
  • 2-3 cinnamon sticks
  • 3 cloves
  • 2 tbspn of oil

Instructions
 

  • Mix all the ingredients of minced chicken mentioned above. keep it for half an hour.
  • Once the kheema is marinated for half an hour make round shapes. Make sure its very smooth and without cracks anywhere
  • After shaping each kabab set it aside .Once all are done heat some oil . Fry the koftas for about 3 mins or until thy r slightly firm and well held together
  • In a bowl mox biryani masala mentioned above.Add enough water to mix well and form a thick paste.
  • Heat about quarter cup of oil then add 3 big finely chopped tomatoes and the masala mixed in the bowl
  • Stir well till oil separates. Add sme water if needed until the tomatoes are well cooked. Then add 2 fried onion and 1/4 cup curd and mix well.
  • Add fried koftas. Donot use spoon.Cook the masala until koftaa are well cooked.Keep adding water a little at a time if needed and mix by moving the pan. Using a spoon might break your kofta
  • once ready remove the koftas on the plate.
  • Male Biryani ricw aa fokkoqs . wash then soak 3 cups of rice in water for 20 mins . Soak saffron stranda in some water and set aaide.
  • Bring a big pot of water to boil , add salt cardamon, cinnamon, clives and 2 tbspn oil
  • Drain the soaked rice and add to this water when it is boiling. cook until the rice is about 3/4done . Remove and strain out all water
  • Now layer the rice in a big pot placing the biryani masala and koftas in between the layers of rice then drizzle 2 tbspn oil . some soaked saffron watee . Seal the pot and put on dam on the stove or bake in oven for 10 mins. Serve it with boiled eggs

Notes

Get the mince twice for a amooth mixture. u can also do it with mutton mince but make sure there is no fat in the meat. Any fat will male tge koftas break and crack during frying.
