Chicken In Peach Sauce

The pairing of seasonal fresh fruit and chicken is a great experience. Specially chicken with Apple, Peaches, Prunes or even Grapefruit is a great combination. In last few months, I have cooked chicken with these fruits which came out as super tasty. These recipes are tasty and healthy too. I shall share the recipes one by one:

Ingredients
- Chicken cut into medium size - ½ kg
- Peaches- 3 pitted and halved
- Lemon juice- 1 tblspn
- Freshly ground black pepper- 2 tspn
- Onion sliced- ½ cup
- Ginger grated- 1 tblspn
- Peach pulp or juice- 1/4th cup
- Worcestershire sauce- 1 tblspn
- Ref chili flakes or hot sauce- ½ tspn
- Sugar- ½ tspn
- Salt
- Olive oil- 2 tblspn
- Butter- 1 tspn or more

Instructions
- Marinate the chicken with ginger, Garlic, 1 tspn black pepper, ½ tspn salt, lemon juice and 1 tspn olive oil for 20 mins.
- In a pan pour 1 tblspn olive oil and 1 tspn butter. Add chicken and sear them till these are cooked and browned on both the sides.Take out the chicken. In the same pan put the peaches. Sear them with some salt pepper till they are charred.
- In the same pan, add balance oil and butter. Saute onion till lightly browned. Add peach pulp/juice, chicken stalk, sugar and chili flakes. Check the seasoning and add accordingly to make the sauce sweet & tangy.
- Add chicken & peaches to it. Cook covered till the sauce reduces to required consistency and chicken pieces are coated well with the sauce.
- Its ready to serve. Best paired with jasmine rice or bread of your choice.
